How to Make Reese’s Peanut Butter Cupcakes

Step 1: Preheat the Oven

Start your baking adventure by preheating your oven to 350°F. Trust me, this step is essential for our Reese’s Peanut Butter Cupcakes. A hot oven ensures even baking and helps the cupcakes rise beautifully. While the oven heats, let’s get everything else ready!

Step 2: Mix Ingredients

In a medium-sized mixing bowl, grab that chewy fudge brownie mix. Combine it with vegetable oil, water, and your beaten eggs. Stir gently until just combined. It’s okay if there are a few lumps; we don’t want to over-mix and toughen our cupcakes. Keep that chocolatey goodness intact!

Step 3: Prepare the Cupcake Liners

Now it’s time to prepare our cupcake pan! Line two regular-sized muffin pans with cupcake liners. For extra assurance that your cupcakes won’t stick, lightly spray the liners with nonstick spray. A little precaution goes a long way when it comes to easy clean-up!

Step 4: Layer the Peanut Butter Cups

Take a full-size or miniature Reese’s peanut butter cup and place it at the bottom of each cupcake liner. This hidden treasure is what makes our cupcakes so special. It will melt into a gooey center that chocolate and peanut butter lovers dream about!

Step 5: Add Brownie Batter

Next, spoon about 1½ tablespoons of that rich brownie batter over each peanut butter cup. Make sure it completely covers the cup. This chocolatey layer is where the magic happens as it bakes. You can practically taste the delightful fusion of flavors already!

Step 6: Bake the Cupcakes

Slide your cupcake pans into the preheated oven and bake for 20 minutes. The aroma of chocolate will fill your kitchen, promising a delicious treat ahead. After baking, let them cool completely before frosting. Patience here is key for a perfect finish!

Step 7: Make the Frosting

While the cupcakes cool, let’s whip up that creamy peanut butter frosting! In a mixing bowl, combine your softened salted butter, creamy peanut butter, and vanilla extract. Using a stand mixer (or handheld mixer), beat this mixture on medium-high for about 1½ to 2 minutes until it’s smooth and creamy.

Step 8: Decorate the Cupcakes

Once your cupcakes are cool, fill a decorator’s bag fitted with an open star tip—or use a gallon-size Ziplock bag with a corner snipped off. Hold the bag about ½ inch above each cupcake’s center. Squeeze gently to create a star swirl and then follow the outer edge to complete the swirl. Each cupcake will look like a little masterpiece!

Step 9: Garnish and Serve

Finally, sprinkle some Reese’s minis over the frosted cupcakes for that extra touch. This not only makes them look delightful but also adds a pop of flavor. Now, gather your family, serve the cupcakes, and watch their faces light up with joy. You’ve just created a fantastic dessert!

Tips for Success

  • Be sure to let your cupcakes cool completely before frosting; this keeps the frosting intact.
  • If you want a richer flavor, consider using dark chocolate brownie mix instead.
  • With a little practice, piping the frosting can become a fun art; don’t worry about perfection!
  • Store leftovers in an airtight container to keep them fresh for days.
  • Feel free to experiment with different flavors of frosting or filling for variety!

Equipment Needed for Reese’s Peanut Butter Cupcakes

  • Muffin pans: You can use regular or mini muffin pans depending on your preferred cupcake size.
  • Mixing bowls: A large bowl for mixing the brownie batter and a medium one for the frosting works well.
  • Electric mixer: A handheld mixer or stand mixer makes frosting quick and easy.
  • Decorator’s bag: If you don’t have one, a Ziploc bag with a snipped corner will work just fine!

Variations on Reese’s Peanut Butter Cupcakes

  • Gluten-Free Option: Substitute the brownie mix with a gluten-free brownie mix to accommodate gluten sensitivities while still enjoying those rich flavors.
  • Nut-Free Twist: Replace creamy peanut butter with sunbutter or another nut-free spread. Everyone can enjoy a safe treat!
  • Vegan Delight: Use a vegan brownie mix, coconut oil instead of vegetable oil, and flax eggs to create a plant-based version without sacrificing taste.
  • Chocolate Lovers’ Dream: Add mini chocolate chips to the brownie mix for an extra chocolaty kick or use chocolate cream cheese frosting instead of the peanut butter frosting.
  • Different Fillings: Experiment with other candies like chocolate caramel cups or any favorite chocolate treat instead of Reese’s for a unique surprise center.

  • Present them on a decorative cake stand to make your dessert table pop.

Description

Delicious Reese’s Peanut Butter Cupcakes topped with creamy peanut butter frosting and garnished with Reese’s minis.

Ingredients

Scale
  • 18.3 ounce box chewy fudge brownie mix
  • ½ cup vegetable oil
  • ¼ cup water
  • 2 large eggs room temperature and beaten
  • 24 Full size Reese’s peanut butter cups unwrapped -or- 24 miniature Reese’s peanut butter cups
  • 1¼ cup creamy peanut butter
  • ¾ cup salted sweet cream butter softened
  • 1½ tsp pure vanilla extract
  • 2¼ cup powdered sugar
  • 35 tablespoons whole milk
  • 1½ cups Reese’s minis unwrapped (optional garnish)

Instructions

  1. Preheat the oven to 350°F. Line 2 normal size muffin pans with cupcake liners. Lightly spray the liners with nonstick spray. Set them aside.
  2. Add the brownie mix to a medium-sized mixing bowl.
  3. Add in the oil, water, and beaten eggs. Stir just until combined, do not over mix.
  4. Place 1 peanut butter cup in the bottom of the cupcake liner.
  5. Spoon 1 ½ tablespoons of the brownie mix on top of the peanut butter cup.
  6. Bake for 20 minutes. Allow the cupcakes to completely cool before frosting.
  7. Using either a stand mixer, or a medium-sized mixing bowl and a handheld mixer on medium-high speed, beat together the butter, peanut butter, and vanilla extract for 1 ½ – 2 minutes, until smooth.
  8. Add the powdered sugar ½ cup at a time, alternating with the milk until completely incorporated and smooth.

  11. Sprinkle a few of the Reese’s mini unwrapped candies over the frosted cupcakes.

Notes

  • You can use miniature Reese’s cups for smaller cupcakes if desired.
