  • ¼ cup butter melted
  • 2 teaspoons garlic minced
  • 8 slices cheddar cheese sharp

  • salt and pepper to taste

Instructions

  1. Start smoker and set it to 350 degrees Fahrenheit.
  2. Cut each potato so there are about 8 slices, making sure not to cut through the bottom of the potato. We recommend placing chopsticks on each side of the potato so you can’t cut all the way through it.
  3. Place each potato onto the center of a heavy-duty aluminum foil sheet about 14” x 12”.
  4. Combine melted butter and garlic in a small bowl and brush it on the potatoes making sure to get in between the slices.
  5. Wrap around the potato and place on the smoker for about 40 minutes or until fork tender.
  6. Remove from smoker, cut each piece of cheese into about 8 slices and place one in between each slice of potato. Place back on the smoker to melt, without wrapping the foil around them.
  7. Remove from smoker and sprinkle with chives. Serve immediately.
